- 2 apples (Granny Smith or Honeycrisp), peeled and chopped
- 2 large eggs
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, whisk together eggs, brown sugar, oil, buttermilk, and vanilla.
- In another bowl, mix flour, cinnamon, baking powder, baking soda, and salt.
- Gently stir the wet ingredients into the dry ingredients, being careful not to overmix.
- Fold in the chopped apples.
- Divide the batter into muffin cups, filling them almost to the brim.
- Mix sugar and cinnamon, sprinkle on top of the muffins.
- Bake for 7 minutes, then reduce the heat to 350°F (175°C) and bake for an additional 15-20 minutes until golden.
- Let cool for a few minutes before serving.
Notes
Muffins freeze well; you can enjoy them later too. Fill muffin cups generously for tall tops!
