Description

Deliciously fluffy banana muffins made with ripe bananas and brown sugar for a perfect sweet treat.


Ingredients

  • 1/2 cup brown sugar
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 cup milk
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas.
  3. Add brown sugar, egg, and vegetable oil to the mashed bananas and mix until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and cinnamon.
  5. Gently fold the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Add milk and vanilla extract, if using, and stir until smooth.
  7. Fill muffin liners nearly to the top with batter.
  8. Bake in preheated oven for 18-20 minutes or until a toothpick comes out clean.
  9. Let muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For added flavor, consider mixing in chocolate chips, chopped nuts, or a sprinkle of sea salt on top before baking.
