Description
Elegant and delicious chocolate éclairs made with light choux pastry, filled with vanilla cream, and topped with a glossy dark chocolate glaze.
Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 oz dark chocolate, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, bring water and butter to a boil. Add flour and salt, stirring until a dough forms.
- Remove from heat and let cool slightly. Then, beat in eggs one at a time until smooth.
- Pipe the mixture onto a baking sheet in 4-inch long lines.
- Bake for 20-25 minutes until golden and puffed. Let cool.
- For the filling, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fill cooled éclairs.
- Melt dark chocolate and drizzle over filled éclairs.
Notes
Best enjoyed fresh. Can be made a day in advance but are best eaten on the same day they are filled.
