Classic French Chocolate Éclairs

Description

Elegant and delicious chocolate éclairs made with light choux pastry, filled with vanilla cream, and topped with a glossy dark chocolate glaze.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 oz dark chocolate, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, bring water and butter to a boil. Add flour and salt, stirring until a dough forms.
  3. Remove from heat and let cool slightly. Then, beat in eggs one at a time until smooth.
  4. Pipe the mixture onto a baking sheet in 4-inch long lines.
  5. Bake for 20-25 minutes until golden and puffed. Let cool.
  6. For the filling, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Fill cooled éclairs.
  7. Melt dark chocolate and drizzle over filled éclairs.

Notes

Best enjoyed fresh. Can be made a day in advance but are best eaten on the same day they are filled.
