Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • For the Lemon Glaze:
  • 1 cup powdered sugar, sifted
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • Optional: a splash of milk

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, combine the cream, egg, lemon juice, and lemon zest.
  5. Pour the wet ingredients into the dry and mix until just combined.
  6. Turn the dough onto a floured surface, gently kneading it a few times before patting it into a circle about 1 inch thick.
  7. Cut the dough into wedges and place on the prepared baking sheet.
  8. Bake for 15-20 minutes until lightly golden.
  9. While the scones are baking, make the lemon glaze by whisking together the powdered sugar, lemon juice, and zest until smooth.
  10. Once scones are slightly cooled, drizzle the lemon glaze over them.

Notes

Serve warm and store airtight for up to two days. You can freeze the scones for later use.
