Ingredients

- 2/3 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter (melted and cooled)
- 1 tsp vanilla extract (or lemon zest)
- Pinch of salt
- Optional: extra zest, chocolate for dipping
Instructions
- Preheat your oven to 375°F and grease your madeleine pan well.
- Beat eggs and sugar together until pale and foamy.
- Add vanilla extract, then gently fold in flour and salt.
- Pour in the cooled melted butter and fold until just combined.
- Chill the batter for 20 minutes.
- Spoon batter into the pan, being careful not to overfill.
- Bake for about 10 minutes, until golden and with a little hump in the middle.
- Enjoy warm out of the pan or dust with powdered sugar once cooled.
Notes
You can freeze madeleine cookies after they cool. Place them in a freezer bag and warm them up in the oven when you crave a treat.
