- 2 cups all-purpose flour
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup molasses
- 1 large egg
- 3/4 cup heavy cream
- 1 tsp vanilla extract
- Optional: turbinado sugar for sprinkling
- Optional: raisins or crystallized ginger
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix all the dry ingredients well.
- Work in the cold butter using your fingers or a pastry cutter until the mixture resembles pebbles.
- In another bowl, mix the cream, molasses, and egg.
- Pour the wet mixture into the dry ingredients and fold until just combined.
- Dump the dough onto a floured surface and pat it into a circle, then cut into wedges.
- Transfer to a baking tray, brush with cream, and sprinkle with sugar if desired.
- Bake for 15-20 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
Keep butter cold for best results. Be careful not to over-mix the dough.
