Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup molasses
  • 1 large egg
  • 3/4 cup heavy cream
  • 1 tsp vanilla extract
  • Optional: turbinado sugar for sprinkling
  • Optional: raisins or crystallized ginger

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix all the dry ingredients well.
  3. Work in the cold butter using your fingers or a pastry cutter until the mixture resembles pebbles.
  4. In another bowl, mix the cream, molasses, and egg.
  5. Pour the wet mixture into the dry ingredients and fold until just combined.
  6. Dump the dough onto a floured surface and pat it into a circle, then cut into wedges.
  7. Transfer to a baking tray, brush with cream, and sprinkle with sugar if desired.
  8. Bake for 15-20 minutes until golden brown.
  9. Allow to cool slightly before serving.

Notes

Keep butter cold for best results. Be careful not to over-mix the dough.
