Description

A colorful and healthier alternative to mashed potatoes, made with smashed carrots that are sweet and comforting.


Ingredients

Scale
  • 1 lb carrots, peeled and chopped
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of smoked paprika
  • Fresh herbs (parsley or chives), for garnish

Instructions

  1. Peel and chop the carrots into chunks.
  2. Bring a pot of salted water to a boil and cook the carrots until fork-tender, about 12-15 minutes.
  3. Drain the carrots and return them to the warm pot.
  4. Add olive oil and seasonings, then smash with a potato masher, fork, or whisk until desired texture is reached.
  5. Taste and adjust seasoning as needed. Serve warm.

Notes

Keep smashed carrots simple to let their natural sweetness shine. Adjust seasoning to taste.
