- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Gently fold in the blueberries and lemon zest.
- In a separate bowl, whisk together the egg, heavy cream, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until just combined; do not overmix.
- Transfer the dough to a floured surface, flatten it into a circle about 1 inch thick, and slice into triangles.
- Place the scones on a baking tray lined with parchment paper and brush the tops with a little heavy cream.
- Bake for 18-20 minutes or until golden brown.
- Let cool slightly before serving.
