A comforting and easy one pot creamy vegetable soup that’s perfect for chilly evenings.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, bell peppers, zucchini)
  • 1 cup cream or milk
  • Salt and pepper to taste
  • Optional: paprika, for seasoning

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Pour in vegetable broth and add the mixed vegetables; bring to a simmer.
  4. Cook for about 15 minutes or until vegetables are tender.
  5. Stir in cream or milk, season with salt, pepper, and optional paprika, and let simmer for an additional 5 minutes.

Notes

Can be made ahead and stored in the fridge for up to four days. Freeze in flat containers for quicker thawing.
