Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup whole milk
- 1 large egg, beaten (for egg wash)
- Clotted cream (for serving)
- Homemade strawberry jam (for serving)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Pour in the milk and stir until the dough comes together. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently roll to about 1 inch thick.
- Cut the dough into circles using a biscuit cutter and place on the prepared baking sheet.
- Brush the tops with beaten egg for a golden finish.
- Bake for 15-20 minutes, or until golden brown. Serve warm with clotted cream and jam.
Notes
To keep scones from drying out, cover them with a microwave food lid if reheating.
