Description

Delicious warm and fluffy scones perfect for an indulgent afternoon tea, paired with clotted cream and homemade preserves.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup whole milk
  • 1 large egg, beaten (for egg wash)
  • Clotted cream (for serving)
  • Homemade strawberry jam (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until the dough comes together. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently roll to about 1 inch thick.
  6. Cut the dough into circles using a biscuit cutter and place on the prepared baking sheet.
  7. Brush the tops with beaten egg for a golden finish.
  8. Bake for 15-20 minutes, or until golden brown. Serve warm with clotted cream and jam.

Notes

To keep scones from drying out, cover them with a microwave food lid if reheating.
