Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the Greek yogurt, eggs, oil, and vanilla until smooth.
  4. Combine the wet ingredients with the dry ingredients, folding gently until just mixed.
  5. Carefully fold in the diced apples.
  6. Fill the muffin cups almost to the top with batter.
  7. Bake for 16-20 minutes, checking doneness with a toothpick.
  8. Let muffins cool for 5 minutes before removing from the tin.

Notes

For extra flavor, substitute half the sugar with brown sugar. Gentle folding is key to avoid overmixing.
